Fudge (microwave)
1 can sweetened condensed milk
1 package semi-sweet chips
Microwave together on high for about 1 1/2 min. Stir together, then pour into a pan to cool, I used a 9x13 Pyrex. I crushed mints and added them. Once they were cool and hardened, I cut them into squares about 1x1, maybe a little smaller, and I got almost 60 pieces

Cranberry Salad
2 (3 ounce) packages cherry flavored Jell-O® mix
1 (16 ounce) can whole cranberry sauce
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese
1 cup chopped pecans
1 tablespoon mayonnaise
Directions
1.Drain crushed pineapple and save 1/4 cup of the juice. Dissolve gelatin in 2 cups of hot water. Stir in cranberries and crushed pineapple. Pour 1/2 of the mixture in a bowl and leave at room temperature, set the other 1/2 in the refrigerator until firm.
2.In a separate bowl mix together the cream cheese, mayonnaise, reserved pineapple juice and chopped pecans. Spread mixture over chilled gelatin.
Place in refrigerator for 10 minutes.
Pour the room temperature gelatin over the top of the cream cheese layer and refrigerate until set.

Creamy Corn Pudding
1/2 cup butter, melted
2 eggs, beaten
1 (8.5 ounce) package dry corn bread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can creamed corn
1 cup sour cream
Directions
1.Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
2.In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
3.Bake for 45 minutes in the preheated oven, or until the top is golden brown.

Crockpot chicken and veggies
Sometimes you just need some chicken soup. This veggie-loaded crock-pot recipe has everything you need!
Ingredients
1 1/2 lb. raw boneless skinless chicken breasts, halved
1/2 tsp. salt
1/8 tsp. black pepper
Two 14.5-oz. cans (about 3 1/2 cups) fat-free chicken broth
One 15-oz. can cannellini (white kidney) beans, drained and rinsed
One 14.5-oz. can stewed tomatoes (not drained)
2 cups bagged coleslaw mix
2 carrots, chopped
1 small onion, finely diced
1 cup frozen peas
1/2 tsp. fresh thyme
1 bay leaf
Directions
Evenly season chicken with 1/4 tsp. salt and the pepper. Place all ingredients in the crock pot and stir.
Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours, until chicken is fully cooked.
Remove and discard the bay leaf.
Remove the chicken and place in a bowl. Shred each piece using two forks -- one to hold the chicken in place and the other to scrape across the meat and shred it. Return the shredded chicken to the crock pot and stir into the soup.
Season with remaining 1/4 tsp. salt. Serve up and enjoy!
Makes 10 servings
PER SERVING (1/10th of recipe, about 1 cup): 150 calories, 1g fat, 570mg sodium, 15g carbs, 4.25g fiber, 5g sugars, 20.5g protein
